H-1 Hidronatural – El Salvador, Finca Las Brisas
H-1 is a rare coffee variety. It is grown at Finca Las Brisas, a family farm in Juayua, El Salvador. The farm sits in the Apaneca-Ilamatepec mountain range, at 1,300 to 1,600 meters. This batch has an SCA score of 86+. It also has a strong acidity and a bold aroma.
A Rare Variety
The H-1 variety was created in the 1980s by Angel Cabrera. He is the plant scientist behind the well-known Pacamara variety. H-1 naturally resists coffee leaf rust. In addition, the farm has adapted it to its own microclimate for almost 40 years. As a result, H-1 is now one of the rarest and most sought-after varieties in El Salvador.
The Hidronatural Process
Most washed coffees use large amounts of water. The Hidronatural process, however, uses very little water during depulping. This reduces the environmental impact. At the same time, the fruit sugars stay in contact with the bean during drying. As a result, the cup has a rounder and more complex flavor.
Tasting Notes
This coffee has flavors of plum and honey. It also has a soft caramel sweetness and a hint of sweet citrus.
A Farm Built for the Future
Carlos Pola runs Finca Las Brisas. He is a fifth-generation farmer. The farm uses several sustainable methods. First, it plants coffee trees along natural contour lines. Second, it uses mycorrhizal fungi to restore the soil. Third, it tracks every batch with digital tools. Thanks to these methods, the farm produces an outstanding coffee. Each cherry is picked by hand at full ripeness.
Finally, we roast this coffee by hand in Montpellier. It is available as whole beans or ground, based on your preferred brewing method.
